The flatbread, about a foot in diameter, is filled with meat filling, topped with fermented black beans, and baked with ghee until crispy on the outside and tender on the inside.
Finally, there's the sand rice made from sand sedge seeds, cooked together with millet and served with pickled turnip shreds, which is refreshing and helps cut through the richness; and the sand date flower cake, which is sweet but not greasy, leaving a lingering fragrance on the lips and teeth.
